Chocolate Orange Easter Loaf Cake

Happy Easter! As it’s the school Easter holidays, I’m making the most of the opportunity to bake and experiment in the kitchen! Yesterday I came up with two new Easter recipes I’m excited to share. They are both so different yet so delicious!

The first I’m sharing this Easter Sunday is my Chocolate Orange Easter Loaf Cake. It’s a marble cake swirled with chocolate orange sponge packed with Terry’s Chocolate Orange Mini Eggs and an orange sponge flavoured with orange zest, juice and a little orange food colouring. I then topped it with a little chocolate orange buttercream, an assortment of Smarties Orange Mini Eggs and Terry’s Chocolate Orange Mini Eggs and drizzled with milk chocolate. The absolute chocaholic’s dream this Easter!

The recipe below requires a standard 2lb loaf tin and is relatively quick and simple to make!

Chocolate Orange Easter Loaf Cake

Ingredients

  • 225 g Butter
  • 225 g Caster sugar
  • 225 g Gluten free self-raising flour
  • 4 Eggs
  • 2 Oranges
  • 80 g Terry's Chocolate Orange Mini Eggs (crushed)
  • 25 g Cocoa powder
  • 1 tsp Orange food colouring

For the icing:

  • 80 g Smartie's Orange Mini Eggs
  • 80 g Terry's Chocolate Orange Mini Eggs
  • 200 g Icing sugar
  • 50 g Butter
  • 75 g Milk chocolate
  • 1 tbsp Cocoa Powder

Instructions

  • Preheat the oven to gas mark 4 or 180 degrees.
  • Line a loaf tin with baking/greaseproof paper.
  • In a large bowl, cream together the butter and sugar (you may want to leave the stork baking block out of the fridge for a while first to soften to make it easier).
  • Gradually add the eggs and self-raising flour while folding.
  • Add the zest of two oranges and the juice of one.
  • Split the mixture into two bowls (I had two thirds to become chocolate, and one third as plain orange).
  • To the chocolate mixture, add the cocoa powder and the crushed Terry's Chocolate Orange Mini Eggs. Crush these in the packet using a rolling pin.
  • To the remaining sponge mixture, add the orange food colouring and mix well.
  • Spoon the two mixtures into the loaf tin, alternating each so that you have a marble pattern.
  • Smooth the top with a spatula and place in the oven. Bake for 45-55 minutes. Use a cake tester/skewer and once it comes out clean, you know the cake is ready to come out the oven.
  • Leave to cool.
  • Make the buttercream by mixing the icing sugar, butter and cocoa powder in a bowl.
  • Pipe this in a swirl pattern across the top of the cake.
  • Place an assortment of orange mini eggs (Terry's Chocolate and Smarties) into the icing. Smash a few so that you can sprinkle the fragments to the edges.
  • Finally, melt the milk chocolate (I did this in a microwave, checking on it every so often). Once melted, pipe through a fine nozzle and drizzle across the whole loaf.
  • Leave the chocolate to set, then cut a big slice and enjoy!

It is so flavourful, rich and creamy all the while being gluten free, lactose free and low FODMAP. It’s sometimes easy to make the same few meals on repeat, and if like me you end up having regulars, then this needs to become one of them. It’s also quick and easy for weeknights as it can all be made in one pot. Let me know if you give it a try!
Gluten free and dairy free afternoon tea at @the_i Gluten free and dairy free afternoon tea at @the_ivy_collection @theivybrasseries in Winchester. There were three open sandwiches topped with smoked salmon, cucumber and basil, and avocado and tomato, two fruit scones and a selection of delicious sweet treats including a chocolate brownie, a plant pot filled with blueberry compote, coconut cream, coconut shavings and lime, frozen berries and a mango and coconut smoothie. This was gift to my mum for Mother’s Day (she had the standard afternoon tea and loved it!) Every item tasted incredible and they easily adapted it without onion and garlic. I recently made this low FODMAP, gluten free veget I recently made this low FODMAP, gluten free vegetarian ramen with @quorn_uk chicken pieces, mixed peppers, beansprouts, carrot, spring onion, stock, chilli, an @itsuofficial miso soup sachet and rice noodles. #AD Through suffering with IBS, I have always stru #AD Through suffering with IBS, I have always struggled with dairy-rich foods, which are naturally high in lactose, resulting in periods of being very unwell after eating. I absolutely love foods high in lactose such as cheese, cream and of course - chocolate - and have missed out on so many desserts in the past! However, I’m so pleased to share that you don’t have to miss out anymore, as you can take @lactojoy, a tablet containing a high dose of lactase, before eating. Lactase digests lactose and reduces any unwanted ill effects after eating. Roast pork with potatoes, green beans, tenderstem broccoli, swede, heritage carrots, parsnips, cauliflower cheese, peas, glazed cocktail sausages and crackling. All gluten free and the majority low FODMAP. Swipe for dessert… We had a gluten free amaretto chocolate tart with raspberry coulis. It tasted incredible. I’m very grateful to have a mum who loves to cook and inspires me to spend time in the kitchen 👩🏼‍🍳 🍽️

Throwback to a delicious half term brunch at @josi Throwback to a delicious half term brunch at @josiesuk in Romsey. It was my first time there. The cafe is so much bigger here than in Bishops Waltham, and I loved having a wander round Romsey afterwards visiting the Abbey and strolling along the river. I’d recommend a visit if you’re local. I wasn’t expecting much on a first attempt but I’d genuinely be happy to be served these in a restaurant. They had a little spice, some zesty lime and a whole lot of crab and a delicious crunch 🦀 They would be great as a starter or as a light weekend lunch. Let me know if you’d like the recipe!

I had the most incredible gluten free buttermilk t I had the most incredible gluten free buttermilk twisted chicken burger at @maritimolounge yesterday. It came with crispy bacon, cheese, tomato, salad and mayonnaise (I had it without the chipotle sauce and guacamole to avoid onion and garlic). I can honestly say it was probably the best chicken burger I’ve ever had. The crunchy coating on the chicken was the real highlight and I recommend everyone goes to their local @thelounges to give a try! The view was also stunning, swipe to see the sunshine over Ocean Village. It’s one of my favourite spots to sit in Southampton. 🌊 ☀️🛥️

These are valentines linzer biscuits but you can make them any shape, for any occasion. It’s a light gluten-free buttery shortbread biscuit held together with seedless raspberry jam.
