It’s that time of the year, when all I want to do is curl up on the sofa, to avoid the wind and the rain, with a comforting piece of homemade cake and a hot cup of tea. This is the perfect cake to enjoy this winter. A traditional coffee and walnut loaf cake that doesn’t contain any gluten or dairy, and of course, it’s Low FODMAP.
Walnuts are safe on the Low FODMAP diet at 30g, so having a slice (or two!) will keep you well under the recommended limit. For this recipe, I use decaffeinated coffee as I find too much caffeine wreaks havoc on my stomach. I usually have one caffeinated drink a day, which is my first cup of tea to wake me up in the morning. The rest of the day, I drink decaf.
I’ve made this cake a few times now, and it’s equally as nice without walnuts. If you have a nut allergy, or if, like my other half, you don’t like ‘bits’ in the cake, you could just put walnuts on the top. They still add the flavour and texture without being spread throughout the cake.
Coffee & Walnut Loaf Cake
Ingredients
- 150 g Caster sugar
- 125 g Butter
- 175 g Gluten free self-raising flour
- 2 Eggs
- 1½ tbsp Decaffeinated instant coffee (stirred into 2 tbsp boiling water)
- ½ tsp Baking powder
- 20 g Walnuts (chopped into small chunks)
For the icing:
- 200 g Icing sugar
- ½ tsp Decaffeinated instant coffee (dissolved into ½ tbsp boiling water)
- 75 g Butter
- 25 g Walnuts (chopped into small chunks)
Instructions
- Preheat the oven to gas mark 5 or 170 degrees fan. In a large bowl, mix together the butter and sugar.
- Add the eggs, self-raising flour, baking powder, coffee and walnuts and stir until well combined.
- Transfer the cake mixture to a lined loaf tin, and smooth the top evenly with a spatula.
- Bake for 40 minutes and leave to cool.
- To make the icing, mix together the icing sugar, butter and coffee until it forms a smooth, spreadable icing. Using a palette knife, spread this on the surface of the loaf cake and decorate with walnuts.

Hello, I’m so glad I came across your website 🙂 I started following a low FODMAP diet this year and have been finding it tricky to buy various shop bought products, as they are sometimes GF but not DF.
