Salmon Fish Cakes

Now that the weather is warming up, I’m really getting in the mood for warm salads (I find cold food a little unappetising) so I decided to try my hand at making some fish cakes from scratch. I looked at a few recipes online for inspiration, but ended up going my own way, selecting all the ingredients I love and hoping for the best! The end results was actually really good, they didn’t fall apart, the fish wasn’t dry, and most importantly, they were tasty! Just in case they tasted a little dry, I decided to make up my own garlic chilli mayonnaise to go with it, which I’ve also featured below. I’m quite into my spice at the moment as it really adds flavour which us FODMAPPERs can often miss out on!

Salmon Fishcakes

Servings: 2

Ingredients

  • 400 g Salmon Fillets I used Sainbury's basics for slightly cheaper version, you could also use white fish such as haddock or cod, or make a mixed fish cake!
  • 2 Jacket Potatoes
  • Handful of Parsley finely chopped
  • Juice of Half a Lemon
  • ½  Red Chilli finely chopped
  • 1 Large Egg Yolk
  • 1 tbsp Olive Oil
  • Splash of Lactose-Free Milk
  • 30 g Gluten Free Plain Flour seasoned with black pepper
  • You could also add a few green tips of spring onion

For the garlic chilli mayo:

  • 1 tbsp Garlic Infused OIl
  • 3 tbsp Mayonnaise I use Hellman's light mayonnaise
  • 1 Red Chilli finely chopped

Instructions

  • First, bake the salmon in the oven at 200 degrees (gas mark 6) in foil for about 15-20 minutes. Be careful not to overcook the fish at this point as it will be cooked again in the frying pan later on.
  • While the fish is baking, place two potatoes in the microwave, prick with a fork and cook for approximately 8 minutes, or until the potatoes are soft. If you have a bit more time you can boil these as they will be easier to mash. Leave both the fish and the potatoes to cool, and prepare the remaining ingredients.
  • In a large bowl place the egg yolk, red chilli and parsley. In a separate bowl, spoon out the centre of the jacket potatoes and mash with a splash of milk, olive oil and lemon juice. As the fish might be quite warm at this point, flake with a knife and fork and add to your egg mixture. Add the mashed potatoes and mix all the ingredients with your hands. This will be a little hot so you'll need to be stealthy! Once you've mixed all of the fishcake ingredients together, form approximately six small fish cake patties, coat these in gluten free flour and fry in a little oil. These will need a few minutes on each side, until all of the flour has gone crispy.

Notes

To make the garlic chilli mayo, it's super easy, just fry red chilli in a little garlic oil until it's softened. Leave to cool. Before serving the fishcakes, stir the garlic chilli into the mayonnaise and voila! Simple, yet a tasty low FODMAP dip.

The recipe makes approximately 6 fishcakes, which I served with garlic chilli mayo, a mixed leaf salad and a slice of lemon. Fresh and delicious! Let me know if you give this recipe a try, I’d love to see how they turn out. Tag me on my social media or accounts, or send me a direct message! Enjoy!

    This did not come with a print icon. When I tried to save it, it came out all garbled. Please, I love your recipes and often save them for future reference. Any way I have bookmarked it, and that will have to do. But I am a little bit ocd, and I like like to save things in more than one place.

I trialled a new recipe this week for a slow cooke I trialled a new recipe this week for a slow cooked low FODMAP fish curry. It was absolutely delicious! It’s a cheap curry too using frozen fish and a homemade spice mix. I served it with basmati rice, lime pickle (I found it in @sainsburys but to be honest I wasn’t a fan!), poppadoms and mango chutney (garlic free!) I picked up a @marksandspencer made without wheat tiger loaf and topped it with scrambled eggs and avocado (note - more than 1/4 of a small avocado needs to be reintroduced) 🍞🥑🍳 I then tried the @marksandspencerfoodpr plant kitchen ‘bangers’! They don’t contain onion or garlic but they do have mystery ‘flavourings’ and soya so without further investigation I can’t guarantee they’re low FODMAP, I gave them a go as I’m trying to reduce my meat consumption. What food are you enjoying this bank holiday?!

I wish I was tucking into this today 🥞🍓🫐🍌🥓☕️ There are gluten free free pancakes with raspberries, strawberries, blueberries, banana, bacon and a choice of clotted cream, maple syrup or golden syrup to pour on the top. This also comes with juice, a hot drink and an additional course of eggs for £30pp. A proper treat! Who else could work their way through this right now?! 🙋🏼‍♀️

I tried something a little different to snack on y I tried something a little different to snack on yesterday and made these low FODMAP baked cheese and broccoli bites. Using only the florets, you can have approximately 75g of broccoli per serving. I dipped them in a little salad cream and they were so good! Throwback to the first meal I cooked in the new ki Throwback to the first meal I cooked in the new kitchen. A low FODMAP and gluten free spaghetti bolognese made with @quorn_uk mince as I prefer it to meat! It was delicious! I can remember it now, and it was almost a month ago! I had been ill all week with a mystery flu-like illness and the worst nausea and it was the first meal I actually fancied! It’s a classic isn’t it?! It’s a nutty base with a coconut and chocolate filling then topped with @doisyanddam vegan eggs I found in @hollandandbarrett. It’s so quick to make as it doesn’t require baking. Delicious! The brownie is gooey exactly like it should be, while the cornflakes are encased in a crisp, caramelised crust. I can’t stop eating them. I went for the Salmon and Eggs on Toast (gf) with a decaf caramel latte with oat milk. I opted for poached eggs, which were cooked perfectly, and it came with watercress too which I love! Looking for somewhere to hide away from the rain t Looking for somewhere to hide away from the rain this weekend? We recently went to @billsrestaurant in Southampton for a late brunch and I went for the Smashed Avocado, Feta and Poached Eggs served with gluten free toast and a side of sweet potato fries. It was one of the most flavourful meals I’ve had out in a while. I ordered it without the pickled red onion and dressing to avoid onion/garlic, however I am able to tolerate avocado… 1/4 of a small 🥑 is low FODMAP, you will need to reintroduce larger portions. There are lots of potential low FODMAP options on the menu and the staff were pretty helpful in adapting my order. Have you been to Bill’s recently? What did you order? Share in the comments below…
Dreaming of this prawn risotto right now! This wil Dreaming of this prawn risotto right now! This will be one of the first meals I cook when our kitchen is finished. It’s really easy to make and it tastes so rich, creamy and delicious. A similar recipe can be found on my blog under ‘seafood risotto’ if you’d like to give it a try. I add plenty of Parmesan now too as I’ve decided it gives it another level of flavour! What’s your favourite risotto to make?  Let me know if you give this one a try.
I went to @marksandspencer today and found lots of I went to @marksandspencer today and found lots of lunch or light dinner options that are low FODMAP and gluten free (although some you need to avoid the soy sauce if coeliac). Swipe for all the delicious sushi and salads I found ➡️ Tonight I’m having the crayfish and mango salad, and tomorrow I’ve got the classic sushi selection to try! All are free from onion and garlic. Some do contain potential FODMAPs such as mango and avocado, but they need to eaten in small quantities or reintroduced. Have you tried any of these before?
