Low FODMAP Smoked Fish Salads

I’ve been trying to have lighter evening meals with more salads, as I’m often short of time and hate going to bed feeling full, and I’ve been loving adding smoked fish to the mix! The two salad recipes below are filling, packed full of nutrients and most importantly, they are gluten free and tummy friendly.

The first salad I tried was a smoked mackerel salad. It had such a tasty combination of flavours from the salty samphire to the peppery watercress, and it was the perfect weeknight meal. The recipe is as follows:

Smoked Mackerel Salad

Servings: 2

Ingredients

  • 400 g British baby potatoes
  • 75 g Watercress
  • 3 Eggs
  • 70 g Samphire
  • 180 g Smoked Mackerel
  • 150 g Green beans I used tinned

Instructions

  • Boil the potatoes for 20 minutes. While the potatoes are cooking, boil the eggs and the green beans and fry the samphire for a few minutes.
  • Prepare the salad on a large serving plate starting with the baby potatoes, green beans, samphire, watercress then top with smoked mackerel and hard-boiled eggs (quartered).
  • Serve immediately and enjoy.

Another I tried was a smoked salmon and cream cheese inspired by last year’s holiday to Ibiza. This classic combination always works well in bagel or on crackers, but I’d never thought to incorporate it into a salad.

Smoked Salmon and Cream Cheese Salad

Servings: 2

Ingredients

  • 400 g British baby potatoes
  • 40 g Watercress
  • 50 g Mixed leaf salad
  • ¼ Cucumber diced
  • 3 Eggs
  • 75 g Soft cheese
  • 120 g Smoked salmon
  • ½ Juice of lemon

Instructions

  • Boil the potatoes for 20 minutes. While the potatoes are cooking, boil the eggs.
  • Prepare the salad on a large serving plate starting with the baby potatoes, cucumber,
    watercress, mixed leaves then top with cream cheese (I used an icing nozzle to
    pipe this), smoked salmon, hard-boiled eggs (quartered) and a squeeze of lemon.
  • Serve immediately and enjoy.
