It’s Christmas Eve! I hope you’re all feeling ready for the big day! Today has been super busy, so I though I’d share these from last week. I baked these gluten free Christmas brownies for my work colleagues to celebrate the end of term using the recipe from my e-book, then topped them with @kitkat santas and @droetkerbakes chocolate decorations. Incredible Sunday roast at @huntersromsey. This is all gluten free and doesn’t contain any onion or garlic. I went for the chicken supreme proper plated roast and it even came with a gluten free Yorkshire pudding! The puddings were all gluten free too and there was so much choice! I had the jam sponge pudding with crème anglaise (with a lactase enzyme) - so good! I feel that pub roasts are getting so much better recently, it’s great to have so much choice in and around Southampton.

Christmas hack - make your roast potatoes in an air fryer to free up oven space! I used my new @cosori.uk Twinfry Air Fryer to make these incredibly crisp yet fluffy roasties. I par-boiled the potatoes for 7-10 minutes before putting in the air fryer at 220 degrees for just 30 minutes. What a game-changer. I’m not sure I’ll be cooking them in the oven again! It was the night before Halloween, when all through the night the creatures started stirring to give you a fright 🎃 👻 🧟‍♀️ I made these ghost cupcakes a couple of years ago and never shared the recipe, so I had to experiment again! Spooky season is almost upon us so why not try this warming Spiced Pumpkin Pasta made with gluten free pasta. Sunday brunch at @mettricks Portswood. I went for the smashed avocado on toast with poached eggs, with a side of loaded fries. The fries were topped with bacon, cheese and maple syrup, a somewhat controversial combination that my other half didn’t quite get on board with. A rainy, grey Sunday calls for brunch at @the_garden_society. I had poached eggs and avocado on gluten free toast with crispy bacon 🍳 🥓 🥑 Avocado is only low FODMAP in small portions, however I’ve managed to reintroduce a little more over time. I’m also trying to get into coffee again, so I tried a decaf cappuccino with oat milk and I thoroughly enjoyed it. I often find coffee far too bitter but the oat milk really helped! What are your plans today?
