Whisk together the egg and the milk in a bowl (I use a pasta dish as it's quite flat for soaking the bread).
Add the cinnamon and mix well.
Soak the gluten free bread in the egg mixture, turning on both sides to soak up as much of the liquid.
In a large frying pan, heat the butter until it melts.
Place your soaked bread into the pan. Fry on each side for a few minutes until golden brown. If you have any egg mixture left over, pour this over the bread carefully.
Once the French Toast is cooked on both sides, serve on a plate and sieve icing sugar over the top. Add any fruit you fancy, I personally like mine with blueberries, strawberries and raspberries, then drizzle with maple syrup.
