Mini Carrot Cake Loaves


  • 200 g Gluten free self-raising flour
  • 1 tsp Baking powder
  • 150 g Light brown sugar
  • 150 g Carrot (grated)
  • 2 Eggs
  • 150 ml Sunflower oil
  • 1 tsp Cinnamon

For the icing:

  • 100 g Icing sugar
  • 100 g Butter (dairy free) or cream cheese (lactose-free)
  • 1 Zest of an orange
  • 12 Sugar carrot decorations (available from Sainsbury's)


  • Preheat the oven to 180 degrees or gas mark 4. 
  • Place all of the ingredients into a large bowl and mix well (either by hand or by using a mixer). 
  • Place into a mini loaf tin (see above for a link to the tin I used), and bake for 20-25 minutes. 
  • Place the cakes on a rack to cool and make the icing.
  • Spread onto the carrot cake loaves and decorate with a sugar carrot.
